I love bananas. I love cupcakes. I love Rum! So Banana Rum Cupcakes? Extra in love! What’s better than a decadent sweet spiked cupcake? Nada, nothing, zip! Add a peanut butter buttercream frosting and you’ve got a serious winner. I definitely prefer cooking to baking, but I can still hold it down in the baking arena as long as I keep things simple 🙂

The idea of these cupcakes came to me as I was brainstorming what to bring to a Halloween party last month. I wanted to be creative, but not too crazy (since I don’t really bake) so I figured how hard could making a spiked cupcake be? Just substitute the liquid you normally use (milk or water) for liquor! Boom!
Banana Rum Cupcakes were my decision because, well, I love bananas.
I used a basic cupcake recipe like this one HERE as a guide and added my additions. I made these cupcakes TWICE! The first time it was way too dense. The second time I added more flour and it came out better. So definitely don’t skimp on the flour. Hope you enjoy 🙂
Ingredients
- 2/3 cup granulated sugar
- 2/3 cup brown sugar
- 1 cup unsalted butter, melted
- 3 eggs
- 1 tsp vanilla extract
- 2 bananas, mashed
- 2 1/2 cups flour
- 1 tsp of salt
- 2 1/2 tsp of baking powder
- 1 - 1 1/4 cup spiced rum (I used Captain Morgan)
For the Frosting:
- 1/4 cup peanut butter
- 1 package of Pillsbury Purely Simple Buttercream Frosting Mix
Instructions
- First throw on your favorite track, your about to get down in the kitchen!
- Preheat oven to 350 F
- In a bowl, combine sugar and melted butter, mix well. Then add each egg one at a time. After that is all mixed up, add in the mashed bananas and vanilla.
- In another bowl, combine the flour, baking powder and salt. Once mixed, add it to the sugar mixture.
- Next, add the rum slowly to reach the desired consistency of your batter.
- Pick your favorite cupcakes liners (I used Spiderman 🙂 ) and line your cupcake tray. Fill each liner with batter, leaving room at the top for it to expand.
- Bake for 20 minutes or until a toothpick come out clean.
For The Frosting:
- Follow the directions on the package of Pillsbury Purely Simple Buttercream Frosting Mix
- Once prepared, add in your peanut butter and mix until smooth.
- Pipe on to cupcakes. (If you don't have a piping bag, place frosting into a plastic ziplock bag, seal it and cut one of the corners. Boom! Piping bag.)
